Summer Recipes

It is really hot here, as in even with all possible cooling mechanisms in place, it is 84 degrees currently INSIDE my house, probably warmer outside. I am trying to find dinner ideas that require little to no cooking, especially not the oven which seems to heat up my place even more. I can stand the stove for about 20 minutes at the very most. Thanks!

I'm all about slow cooker meals in the summer since the crock pot doesn't really heat up my house- like slow cooker burritoes (I'll post recipe later) or that Italian chicken. With the burritoes you can use the leftovers for taco salads too.

I also like salads with the precooked chicken strips and a bunch of veggies. Or salad wraps with all the fixin's- I totally miss those wraps from the BYU food court.

Um... you can precook chicken and then refrigerate it and use it all week in salads, wraps, Oriental chicken salad, etc. Just try and cook all your stuff in the morning or all at once so you only get hot once.

I totally agree! We should post some summer recipes. I'll think of what I have and post them on the blog. Even though it's 52 degrees today and raining!!

I've been trying to think for you. I really really love the bbq chicken salad recipe I posted sometime ago. And, I'm always game for bbqing--do you have a grill? I do roasted potatoes or baked homemade fries with it. And fresh fruit. Yum.

Or, you could always do the crock pot--make something to go over rice or noodles.

Sloppy joes is just stove top! Definitely tacos. I love that oriental chicken salad--anyone have the recipe?

I'll post anymore ideas that may come to me later!
