Here are some of mine:
- Zataran's (is that the name?) dirty rice or jamabalya rice mixes. You just need to add sausage or sausage links. Celeste introduced me. Bryan suggested adding an additional 1/2 cup of not-instant-rice and 1 cup of water so it's not so spicy and goes further. Also, 1 lb of meat is a lot for those packets.

What a great post! I am excited to get ideas from everyone. I will have to try the zatarans rice packets, sounds like something Josh would like.
I love to keep Rhodes frozen Dinner rolls in my freezer. I defrost them for about 30 sec. each side in the microwave and flatten the rolls to look like little scones. Here are a few recipes using the defrosted Rhodes rolls.
Navajo Tacos
Defrosted rolls to be scones
Hot oil for frying
Canned chili or any seasoned meat (I have even heard of people using refried beans)
Taco veggies and condiments
Fry up the flattened rolls just like you would a scone. I usually fry 2-3 per person. Top the fried scone with chili and your favorite taco toppings. (Ex: chili, cheese, shredded lettuce, tomatoes, sour cream and olives) It is an open faced taco you eat with a fork. I like to make honey butter and have one for dessert with honey butter smeared on top!
Mini pizzas
Defrosted dinner rolls- flattened
Pizza sauce, spaghetti sauce, or I usually use tomato sauce
Cheese
Your favorite pizza toppings
Make up individual pizzas to each person likings and cook for 8-10 min in a 350 degree oven. I use a lot of canned veggies and keep pepperoni in the freezer. I love to do this on a Monday (hello, is there a busier day than Monday?) and use it for an F.H.E. activity of making your own pizza. I did a lesson of eating right and supplied lots of fresh veggies to use on the pizzas. Tess made a smile face with broccoli and red peppers…and ate them!
I have a pasta salad that we all love and it’s so easy.
Kid Friendly Pasta salad
1 box pasta (I use cork screw or bow tie)
Ranch salad dressing
Cubed cheese
Cubed cooked chicken, ham or spicy salami (I love the Oscar Meyer grilled chicken strips…I keep them on hand for salad or a quick chicken to add to a meal. The chicken is fully cooked and chilled!)
2 Cups assorted veggies that you have on hand (I usually use carrots, broccoli and red peppers)
1 can black olives. You can cut them or leave them whole.
Cook pasta. Run under cold water for a few minutes so it does not melt the cheese.
Add veggies, cheese, meats to the pasta
Add desired amount of ranch dressing and mix. Works best if th e dressing is cold.
I am also a fan of Panini sandwiches…just a fancy grilled meat and cheese sammy with veggies and pesto sauce.
Whenever I make something with veggies, like a meatloaf or lasagna, I always cut up extra veggies and freeze them in individual quart size freezer bags. When I am in a bind for dinner, I pull out a bag, reheat them on the stove with some crumbled bacon or sausage (or nothing) and then make yummy omlettes. My dad taught me that.
Omlettes:
Veggies (mushrooms, peppers, onions, carrots, broccoli, etc)
Eggs- 2 per person, maybe 3
Salt and Pepper
Cheese
Hopefully you know how to make these, but beat your eggs with a little milk, salt and pepper, put in sprayed skillet, let cook and add your veggies and cheese and meat, then fold over and add cheese on top too. Yummy!
I like the Oscar Meyer chicken strips too, you can buy some frozen grilled chicken strips too in the store to last longer, but we make salad wraps with ours-

Wrap and enjoy with some fruit or canned soup or cottage cheese
Mine aren't as fancy as Denise's- sorry! We are all about frozen dinners if we are in a bind. I always keep 2-3 frozen dinners from Trader Joe's in my freezer just in case I need something quick. And we are also a fan of paninis, which we just make in our George Foreman grill. They're yummy with extra spinach and artichoke dip too instead of pesto!
Hey, I was just thinking about creating posts where we talk about things other than actually post recipes, like "What are the food staples that you have to have in your house?" or "What is your favorite kitchen utensil or gadget?" So I'm glad you started this!
I was going to say paninis, but Carissa said that. I usually use meat, cheese, bacon, and spinach or basil.
Salad- mix in any leftover meat, veggies (or frozen veggies thawed), cheese, bacon, and dressing.
Chicken Strips (more like 15 minutes) - cut chicken breasts into strips, coat in egg wash then bread crumbs, place on baking sheet, drizzle with EVOO, bake for 10-12 minutes at 500 degrees.
Frozen meals are great, add a side of rice and a veggie.
Frozen pizza or Papa Murphys.
Hamburgers, they are quick to prepare and cook pretty quick too.
Pizza pasta salad - penne pasta, Italian dressing (any variation of it), parmesan cheese or shredded cheddar, sliced olives, chopped tomatoes, and sliced pepperoni.
So, when I think of super quick meals,I think breakfast, sloppy joes, or Hawaian haystacks. Lately, I've been buying a whole rottiserie chicken from Costco, shreading it, and putting it in sandwich baggies in the freezer. That way I don't have to cook my chicken for dinner and it makes the process sooo much faster!
So here's my list of quick fix meals:
-Sausage, egg and cheese on english muffins
-waffles
-breakfast burritos with eggs, hash browns, and sausage
-French toast
-Fried eggs, toast, hash browns, bacon
-Sloppy joes (recipe on blog...super fast and super yummy!)
-Hawaian haystacks
Make a sauce with cream of chicken soup and a little milk . Add shreaded chicken. Serve over rice and top with cheese, coconut, pineapple, chopped tomatoes, green onions and chinese noodles. And you've got a whole meal!!
I thought of another one...egg rolls and fried rice. Egg rolls are in the frozen section of the grocery store, I love the Asian Sensation brand. Fried rice is as follows:
Day-old cooked rice (day-old makes it dry and perfect for this)
1-2 eggs, scrambled
1 ham steak, diced
1/2 cup frozen peas
Soy sauce
Fry rice in pan on medium heat with some olive oil for a few minutes. Add ham, eggs, and peas. Cook til heated through. Add soy sauce to taste. Start with a little, you can always add more. I usually put a few shakes in then add more as needed. My family loves this recipe!
*You can use another meat, like cubed chicken,but we like the ham better.

Set out a pound of cooked pasta in a large bowl; toss with 1 or 2 tablespoons of olive oil or butter and a dash of salt.
Heat your favorite bottled tomato sauce until simmering (while the pasta cooks) and serve it in small pitchers so everyone can help themselves.
Set out small bowls with toppings and let kids (and grownups) customize their pasta—like an ice cream sundae. Fun choices: grated parmesan, shredded cheddar, cubed mozzarella, chopped roasted red pepper strips, oregano, chopped tomatoes, basil strips, sliced olives, fried mushrooms, alfredo sauce.
