Since we now have church from 1-4 pm (yeah for sleeping in, boo for getting home late!), we are starving by the time we get home. I don't want to come straight from church to cooking at the stove, so I want to do crock pot meals on Sundays now. I need some fun and easy recipes, beyond your typical roast, beef stew, and Italian chicken. Destiny, I am totally making your taco beef next week! Please help me with some ideas!

I love crock pot too! I discovered two recipes in this ward. First, is the Ranch or Italian Chicken crock pot recipe. We just love it. And it's very very easy. Just cook rice or noodles.
Then, everyone always does a roast, but you can also do the same thing with chicken. You throw in chicken, potatoes, and carrots. And add water with bouillon. But, sitting here, I'm wondering why you couldn't add cream of chicken and use that as your gravy. I usually make the gravy separate.
I LOVE crock pot recipes, especially meat ones. You can not overcook the meat! I have a cranberry chicken recipe we love. We serve it over rice.
Cranberry Chicken
4-6 boneless skinless chicken breasts
1 pkg. Lipton onion soup mix
1 can whole cranberry sauce
1 small bottle Kraft fat free French dressing
Mix together soup mix, cranberry sauce, and French dressing. Spoon over top of chicken breasts. Bake covered with foil for 45 min-1hour at 350. Also good in crock-pot on high for 4-5 hours.
I have only done this recipe in a crock pot. It is fool proof.
I found this one on Food Network, I haven't tried it yet but it seems easy and most of the ingredients you should have on hand.
Sweet and Sour Pork
3 cups cubed peeled potatoes (Idaho or Yukon gold)
1 cup chopped onion
3 pound pork roast, trimmed
4 cloves garlic, minced
1 cup water
1/2 cup ketchup
3 tablespoons red wine vinegar
2 tablespoons light brown sugar
2 tablespoons reduced-sodium soy sauce
1 teaspoon Dijon mustard
1/2 teaspoon ground black pepper
Salt
Arrange potatoes and onion in bottom of slow cooker. Place pork on top of potatoes and onion. Spread garlic all over pork.
In a medium bowl, whisk together water, ketchup, vinegar, sugar, soy sauce, mustard, black pepper and salt. Pour mixture over pork.
Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
Slice pork crosswise into thin slices and serve 12 ounces for this meal. Serve with all of potatoes, onions, and sauce.
CINDY CROOKSTON’S FABULOUS SPAGHETTI SAUCE
1 ½ pound hamburger or ground turkey
1 large onion, chopped
1/3 to ½ green bell pepper, chopped
mushrooms, chopped (optional)
1 garlic clove, chopped
2 (15 oz) cans tomato sauce
1-2 (15 oz.) cans tomato paste
1 (29 oz.) can diced tomatoes
2 Tbs.. sugar (optional—Cindy uses it)
1 tsp. salt
½ tsp. Basil
½ tsp. instant onion
¼ tsp. marjoram
¼ tsp. thyme
¼ tsp. garlic powder
¼ tsp. pepper
1/8 - ½ tsp cayenne pepper
1/8 tsp oregano
Sauté ground meat with onions, pepper and mushrooms. Add remaining ingredients and simmer several hours. CINDY USES THE CROCK POT and so do we, on low for about 8 hours. THIS IS OUR FAVORITE SPAGHETTI SAUCE.
