Help me with Easter!

Hey ya'll! I am on a limited budget but still want to have an awesome Easter dinner. Does anyone have any fabulous and cheap side dishes or even main dishes they want to share? I like to have a variety of stuff to choose from, so don't be shy! Just share what ya got!

I'll go first- for dessert I am making the Eclair Cake that I posted back in spring 2007 on the blog. It is so delicious and cheap to make.

I haven't really thought of Easter dinner yet, although I was considering the ham that Stina posted a while back. For sides, I will probably do green beans, I boil them for like 3-4 minutes, then drain and rinse in cold water. I saute 1 shallot and 2 garlic cloves in olive oil for about 5 minutes, then add the green beans and toss til they are hot and serve immediately. My kids eat them up. I'll also do a potato dish, probably potatoes gratin, you can find recipes at allrecipes.com or foodnetwork, basically you bake sliced or shredded potatoes with cream and cheese, usually swiss or gruyere. Keep sharing everyone!

I am not cooking an Easter Dinner but if I did I would probably do these recipes along with a ham and a vegetable. It is very traditional but I can not think of anything else. We have cooked pork chops in the potatoes dish but I think the ham would be too salty. Good luck :)

cindy's Never Fail Rolls

my Aunt Cindy is famous for these rolls, 20 people could eat all of them they are so good!

3 ½ c. warm water
1 c. oil
¾ c. sugar
6 TBS yeast
1/2 -1 TBS salt
2-3 eggs
10 c. flour

Mix water, oil, sugar and yeast. Let rise for 15 minutes. Add the remaining ingredients until dough begins to pull away from sides. The dough will be sticky, don't add more flour. Make dough into four balls. Roll one ball at a time into a big circle. With a pizza cutter cut into 12 pieces. Roll from large end to small end to make a crescent roll. Place on a greased cookie sheet and let it rise in a warm place. I let them get pretty big and it takes about 1 1/2 hours. They will rise a little more in the oven. Bake at 350 for about 10 minutes. If you put them on a high shelf, they will brown nicely on the top without too brown on the bottom. Take out of oven and brush with melted butter. Makes 48 rolls. Usually for Thanksgiving.

Au Gratin potatoes

I never use the bread crumbs or paprika on these and swear by boiling the potatoes first. I have tried about 4 recipes of au gratin/scalloped potatoes and this was the winner, we love this recipe.

2 T. butter or stick margarine
1 small onion, chopped
1 T. all-purpose flour
1/2 t. salt
1/4 t. pepper
2 C. milk
2 C. shredded sharp cheddar (8 oz.)
6 medium potatoes, peeled and thinly sliced
1/4 cup dry bread crumbs or cheese for topping.

Heat oven to 375

I use my food processor to slice the potatoes and then stick them right into a large pot of boiling water. This takes out the starchy taste that does not always bake out. Let the potatoes boil for about 5 min.

In a medium saucepan melt butter over medium heat. Cook the onion in the butter for about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.

Stir in the milk. Heat to boiling, stirring constantly. Boil and stir for 1 minute; remove from heat. Stir in 1 1/2 cups of cheese until melted.

Spread potatoes in ungreased 1 1/2 qt. casserole dish. Pour cheese sauce over potatoes. Bake uncovered for 1 hour.

Mix remaining 1/2 cup cheese and the bread crumbs, sprinkle over the potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 min or until top is brown and bubbly.

I was thinking about doing that ham for Thanksgiving too. And the good thing is you can buy as much as you need--I think. You don't have to buy a whole spiral ham. Although, it is more expensive (I think) for a butt piece. :)

Carrot cake sounds cook. Or that lemon fluff cake.

And, I love funeral potatoes with ham. Let me know if you need the recipe.
