In March 2008 Kelli posted Texas Caviar. My friend also uses this corn salsa recipe that is really good: FRESH CORN SALSA 1 can whole kernal corn 1 can black beans 1 can black-eyed beans 1 bunch green onions, chopped 2 tomatoes, chopped 2 avocados, chopped cilantro, chopped (to taste) 1 pkg good seasons italian dressing mix (make it into the dressing using vinegar and oil. follow the directions on the package)
Mix it all together and serve with tortilla chips.
This is what I do when i want salsa and don't have any...
1 can tomatoes or 3-4 chopped fresh tomatoes 1 small can chiles, chopped onion (amount depending on how much you like onion) cilantro (to your liking) salt and pepper
This tastes so good and fresh and it's so easy. It doesn't keep very long, though so you have to eat it up right away!
I know this doesn't super help you because I don't officially have the recipe, but Lindsay makes good homemade salsa - you could email her and ask how she does it! It sounds similar to Kristi's, but a little different.
