Egg Casserole ideas...

I signed up for an egg casserole for a baby shower next weekend but I've never made one and need some ideas. It needs to fit in a 9x13 pan and needs to taste amazing, I want to make the best food there!

I have never heard of an egg casserole. Do you mean like a quiche? Or a breakfast type casserole?

No idea, the thing said "egg casserole", and it's a brunch, so I'm assuming like a breakfast casserole, with egg, bacon, whatever.

Denise posted this one awhile back, and I have a variation too. I love sausage better than bacon in mine. Also, if you want another idea--I have one that you make the night before. And you cute bread into cubes and pour the egg mixture over the top. Then, you have a cream of mushroom gravy on the top with mushrooms and green peppers. It's really good (the first day).

Brunch Casserole
(Denise Hollinger)

1 pound bacon, ham, or sausage (optional)
1 TBS butter
1 onion, chopped
2 cups sliced mushrooms
4 cups frozen hash browns, thawed 1 tsp. salt
1/4 tsp. garlic salt 1/2 tsp. black pepper
4 eggs 1 1/2 cups milk
1 pinch dried parsley 1 cup grated cheese

Grease 9x13 casserole dish with butter (I just use pam) Cook bacon, ham or sausage until evenly brown Melt butter and fry onions and mushrooms in skillet until tender. Place hash browns in bottom of prepared dish. Sprinkle with salt, garlic slat, and pepper. Top with meat then onions and mushrooms. In large bowl beat eggs with milk and parsley. Pour over casserole. Top with grated cheese. Cover and refrigerate overnight. Bake at 400 degrees F for 1 hour or until set. If preparing and baking the same day, cook for 45 minutes. Tip: I add an extra egg to the dish. If you’re not adding the meat add a few extra eggs.

Variation by Jami Werner:
3 Tbsp oil
2 lbs frozen hashbrowns
1 onion chopped
2 cups cubed ham (or 1 lb sausage—browned and crumbled)
10 eggs
1 ½ cups shredded cheese
salt & pepper
1 green pepper, chopped (optional)
1 red pepper, chopped (optional)

Heat oil in skillet. Add hash browns, onions & peppers. Cook until brown, spray 9x13 pan with Pam. Spread potatoes in pan and top with ham or sausage. Pour beaten eggs over all and season to taste. Gently stir to coat all ingredients. Sprinkle with cheese. Refrigerate. Bake uncovered for 35 minutes at 375. Yield: 8 servings
