Zuppa Tuscana Soup

I made a comment to get you this recipe on the "fall is here" post about soups. This is a knock off recipe of Olive Gardens Zuppa Tuscana soup. Enjoy!!

1 lb Italian Sausage
2 Potatoes
1/2 Onion (chopped)
1/2 lb bacon
2 cloves Garlic.(minced)
2 cups chopped Kale
3 cans chicken broth
4 cups water
1 cup heavy whip cream

After all is cooked stir in whip cream and remove from heat. Serve Hot!

Wow I'm embarrassed...what's kale?! The rest of it sounds great, most of it I already have in my pantry. My kids LOVE soup, I'm totally making this now that the weather is cold (although I have the a/c on today, blame the pregnancy).

Kale is like spinach, isn't it? Anyway, this sounds yummy and so easy. It's raining today and soup sounds way too good right now! Thanks for posting this!

Kale is like a lettuce and a cabbage in one. It is a green leafy vegetable that has an earthy flavor. You should be able to find it in any grocery store.

I finally made this, it was so good! My mother in law always gets this soup at Olive Garden, she said this recipe was better. I think next time I will chop the kale a little more, also I cooked the potatoes in the microwave before adding them towards the end, I'm not sure if that was what I was supposed to do? But it was really good all the same!
