rising price of groceries....

I've been noticing that my grocery bill is getting higher and higher but I've also noticed that potatoes are pretty cheap! You can get a 20 lb. bag for $3! So does anyone have any good potato recipes? My husband was raised on them and my kids love them but I don't really know any great recipes, besides mashed and baked.

I love potatoes. You can do twice-baked potatoes with a salad (Kelli has an awesome recipe), potato soup (kraftfoods.com has a lot to choose from), shepherd's pie with veggies and beef on the bottom and covered with mashed potatoes. I'll post some recipes when I get a chance! Good thinking!

I love potatoes because they are cheap and you can do so much with them. I love this easy recipe and it's good! I also love potato pancakes with some applesauce on top! I don't have a recipe but now I am craving that :)

Onion Roasted Potatoes
1 envelope onion soup mix
4 med potatoes, cut in large chunks
1/3 C. oil (I use olive oil)

Preheat oven to 450. Line a large 13x9 pan or cookie sheet with tin foil. Coat and toss potatoes in oil and seasoning. Bake uncovered for 40 min. or until potatoes are tender inside and crisp outside. You may need to stir ocassionally.

Thanks for the recipe ideas! I forgot about twice baked potatoes. My mom used to make those! Potato soup, shepherd's pie and onion roasted sound good too. Christina, I love sauerkraut so that would be great!
